Babine...ahbeg what is the exact measurement of the ingredients for the short crust pastry for the meat pie.
Did you bake or steam your moin moin.
I don't have photos on file, but will post as soon as possible.

Good girl....I steam my moin moin....in a casserole dish...put skewers at the bottom of the pot...then slice the whole mound after it is done....cooled off...into little square cake-like pieces. No aluminum foils or plastic bags....

The jamaican beef patty is easy...

Jamaican curry(for yellowness)
Ground beef(or ground gizzards/livers/hearts)

INGREDIENTS (Nutrition)
2 cups all-purpose flour
1 1/2 teaspoons curry powder
1 dash salt
1/4 cup margarine
1/4 cup shortening
1/3 cup water

2 tablespoons margarine
1 pound ground beef
1 small onion, finely diced
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
1/2 cup beef broth
1/2 cup dry bread crumbs
1 egg, beaten
Add to Recipe Box

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
Bake in preheated oven for 30 minutes, or until golden brown.

Egusi soup with assorted meat........Just for my 'men'....

Goes well with "semo", eba, fufu, or any "swallow-able"..... cooking time....less than 2 hours.(meats already parboiled)....

Corrrrrrrrrrrrrrrect chicken, snail, smoked turkey, fried red snapper(my favorite fish) and beef stew.....little oil....


Or beans and plantain....
Cooking time? Less than 2 hours.......


Serve with rice/plantain....mixed steamed vegetables or baked potatoes....boiled yam....sweet tatoes or whatever you like.


Or chop some fresh okro....steam a lirrrrle...serve with 'masatrigo'(fufu)....

No cooking during the week.....thank God for salads.

Here's a healthy Chef' salad....crackers.....So Be Life fruit drink(cranberry grapefruit)....

chei you people are killing me
I know of meals but not healthy ones.
I saw DD's mac and cheese
For the ultimate enjoyment,besides the velveeta cheese,cheddar ,oregano and milk (or Cream) add maggi cube and cooked taco meat (ground meat cooked with onions,taco sauce)
Cook on stove top then transfer unto a casserole dish and bake just to brown the top.
I'm eating it right now.
No wonder my diet ain't working

I have packed on some serious pounds....need to hit the gym before I go see that my London bobo(whitelexi) again ooooooooooh...for Xmas....hehehe

Time to hit the gym baby......I have gained like 20 pounds....

I can feel it.....I need new bras....From 36C to 38D......hmmmm Ibu....

Is there any Naija food that cooks in 30 minutes or less? That's about the time I have to get dinner on the table before the kids start to rip off pieces of the fridge or cardboard boxes because they are really hungry.
Also, does anyone know how to make ojojo?
