Default ADALU(Beans and sweetcorn pottage)



It server 4
edit Ingredients to suit the mouths to feed

* 225g/8oz Beans
* 225g/8oz corn (picked from the cob)
* I Onion (sliced)
* Ground pepper
* 2 tablespoon ground Crayfish
* 2 sawa (smoked dry fish)
* water
* 3 tablespoon palm-oil
* salt to taste
One knorr cube.
Directions

1. Pick over the Beans and Sweetcorn, throwing out any stones or pieces of grit. Your best best would be Ewa Oloyin. I don't know what Oyinbos call it but the beans taste like you added a bit of honey to it.
2. Wash and cook the corn in water till soft( I propose soaking the corn overnight in water. if it's naija yellow maize, trust me, I am speaking from experience, soak it overnight....don't waste your gas.........in addition pressure cooker is your friend)
Add your beans and medium sized onion to a pot........cook till tender....In short, cook as you normally cook your beans (once again pressure cooker is your friend)
Once the beans are almost done, add your ground pepper , salt,and crayfish. Remove skin and bones from sawa and flake into small pieces. A better idea is too soak the sawa in hot salt water, once tender add to the beans.

Add your cooked tender corn.........if using oyinbo sweet corn, wait till the beans are fully cooked before adding the corn, no need to precook the corn. Just wash and add...

Add your palm oil
Check seasoning and stir well. Allow to simmer for 10 minutes.

My aunty, this na temptation o!!!!! no provoke me to cook am o. infact e don tey wey i chopulate(eat) this delicacy. ok, i don provoke. I go cook my own this weekend..

This looks like an intresting recipe. I'll try it with canned sweet corn. I'm not sure I can go through the stress of our 9ja corn. LOL!!

You better make sure you add the sweet corn last, else you'll be eating mush....but don't use the canned one. Trust me, i am speaking from experience.

Ok, noted and tanx. I'm just not sure am up for a long boiling exercise as you pointed out.
