Default Roasted Mackerel Fish



Just another idea for frying stew using mackerel.

Buy fresh Mackerel from your sea food store....clean it make sure the gills have been taken out. Put the fish in a bowl of water add some salt and maggi........this idea is to make the seasoning enter into the fish well.

After about 10 to 15 mins, remove fish from water, chop some onions, add the fish and onions to a cooking pot...add little water, cook the fish for a few mins. You don't need to cook the fish all the way.

Remove the fish, drain the water and set aside.

Pre heat your oven, get a non stick baking pan or better yet spray some PAM cooking oil. You don't need much since this fish is rich in Omega Fatty acids.
Put the fish in the roasting pan, roast the fish....till it gets a tinge of brown or how you like it.

Remove fish and also de-bone it...... use it for a delicious fried pepper stew instead of corned beef or use it in your eggs with tomatoes, onions and pepper.

I couldn't find Titus but you can use it as well. For those in Nigeria, no wahala, dem dey sell roasted Titus for una. Una dey enjoy o!

OMG...Roast Titus can turn a saint, into a thief.
The best one I ate, was from one woman, who sold them, near St Agnes Catholic Church in Maryland.(mainland lagos' Maryland, not the US one)
It was delicious....till today I remember that fish, and salivate all over again.

titus /mackerel fish is my best fish any day any time, i enjoy it most by putting loads of roasted pieces in almost all my dishes..stew, all types of soups (works fantastic with ogbono,egusi, okro etc), beans, yam pottage,fried eggs and even with salad (4 that extra bite n flavour..hmmm yummy yummy in ma tummy!)
